Hypo veggie here! What do I do?!

I really don't know what to eat any more. I'm not trying to lose weight or anything, that'll come when I feel better. No, I'm just trying to eat the right things for my thyroid but it's so *bleeping* boring!! sp016
As a veggie who's also trying to eat gluten free, I'm finding the foods available to me are very limited indeed. That can't be good for anyone, surely. I've tried eating a bit of fish but I gagged so much I brought my previous meal up.....so going non-veggie is not an option.
I'm not craving anything in particular on a big scale like carbs or sugar, but my doo-lally brain is so addled and weird that standing cooking in the kitchen for any length of time is truly uncomfortable, so I tend to opt for easy to cook stuff like veg n beans (organic and well-cooked, of course). It's gotten so bad that I was actually fancying broccoli yesterday. Who ever fancies broccoli?! So I thought, "Blow it! I'm having broccoli". I did cook it 1970's style, i.e. for about half an hour until it turned a kind of grey colour sp06
Does anyone have any nice easy to prepare veggie recipes I can add to my portfolio? I'm so confused of what I can and can't eat. I used to love a good tofu stirfry but that's out of the window now unless I frazzle it until its charcoal.
I think maybe once the meds actually start working I may not be so fussy over what I eat, but at the moment, although they're binging my tsh down, my symptoms are still as bad and I feel as if the only thing standing between me and a permanent coma is a good diet.
